Guest Speaker - Tom Bull
Using sheep genetics to create the 'Wagyu of the lamb world'.

General Manager at LAMBPRO and Winner of the Weekly Times Coles 2018 Farmer of the Year, Tom is known for his efforts in breeding sheep for marbling - a key trait when it comes to meat eating quality. 
 

Running 6500 ewes and developing genetics for clients to produce 800,000 lambs per year, Tom has conducted numerous trials to identify the best rams and ewes for marbling traits. Tom explained why he sees a future where farmers are rewarded with significant premiums for producing top-shelf lamb.

Keynote Panel 

How Australia innovates - delivering savvy solutions to global challenges 

 

Panel moderator - Pat Nourse, the creative director of Food + Wine Victoria and previous editor of Gourmet Traveller magazine for 14 years was well versed to guide the conversation with panelists; Jock Zonfrillo, owner of Restaurant Orana, winner of the Good Food Guide's Best Restaurant Award in 2018 and 2019, Dr Michele Allan, the Chairperson of Meat and Livestock Australia and Food Innovation Australia Ltd to provide research investment insight and Will Young, the most respected coffee genius in Australia and the brains trust behind Campos Coffee.

The panellists provided an entertaining and informative discussion, sharing insights as to how we can transform the way we create, distribute and consume food. 

Demo Day 2018 was an event delivered through a collaboration between SparkLabs Cultiv8 and the GATE (Global Ag-Tech Ecosystem), an initiative of the NSW Department of Primary Industries.
